I think the pets already in the token menu are pets made via armor stands, they don't have the pets such as pigs, cows and other animals as they're proper mobs. But they'd be cool to have either way.
For pets we want to use the non-typical minecraft mobs. Also, creating, animated and designing custom pets is a hell lot of work and takes amounts of time.
